Eggless Thandai Pistachio Rose Cake (A Festive Cake for Every Celebration)

This eggless thandai pistachio and rose cake is my go-to festive cake. Thandai is a Holi favourite, but its flavours of rose, cardamom and pistachio make this soft, fragrant cake just as perfect for Navratri, Diwali, Raksha Bandhan or any celebration at home.

Holi in India is not only a festival of colours; it also brings with it special sweets and savouries. It’s a time of feasting together with your loved ones, and the festival is incomplete without the traditional Indian drink, thandai. Thandai is made by pounding together pistachios, almonds, saffron, rose petals, pepper, cardamom, fennel, melon seeds and sugar with milk and rose water. The aroma of this mix is absolutely divine. My mother used to make it with many other dishes, especially on Holi. Inspired by her, I added some thandai mixture to my cake batter to make a Holi special cake for the family. It came out so good that I couldn’t stop myself from sharing it with you all.

A cake for every festival

This cake was born on Holi, but I now bake it all through the festive season. Serve it as a festive dessert after a Navratri or Diwali meal, pack slices in a box as a homemade gift, or bake it for Raksha Bandhan. It is eggless, made in one bowl, and looks beautiful on a festive table with its topping of pistachios and rose petals.

Thandai syrup or thandai powder?

In the video I used a ready-made thandai syrup, but you can use either 2 tablespoons of ready-made thandai syrup or 2 tablespoons of thandai powder. Both give the cake that lovely festive flavour.

My tips for this cake

  • Add the milk slowly. Start with 4 tablespoons and add more only if the batter feels too thick.
  • Use dried rose petals that are food grade, or fresh unsprayed petals from your garden.
  • Bake low. 160°C keeps the cake soft and stops the pistachios on top from burning.
  • Let it cool for 35–40 minutes before unmoulding, so it slices neatly.
