No-Bake Chocolate Biscuit Cake (Eggless, No Oven)

No-bake chocolate biscuit cake dusted with cocoa, sliced to show almonds, walnuts and biscuits inside

Some desserts ask for your whole afternoon. This chocolate biscuit cake asks for ten minutes and a little space in your fridge.

This No-Bake Chocolate Biscuit Cake is rich, fudgy and full of crunch: melted chocolate, butter and honey poured over toasted walnuts, almonds, broken biscuits and dried fruit, then pressed into a tin and chilled until it slices like fudge. There is no oven, no eggs, no flour, and no stress.

Whether it is Diwali, Christmas, a birthday or a weekend card party, when the house is full and guests can drop in any time, a dessert you can make a day ahead is a gift in itself. Keep a chocolate biscuit cake in the fridge, slice it when the doorbell rings, and nobody will believe how little effort went into it.

Why You Will Love This Cake

  • No oven, no eggs: it sets in the fridge, so anyone can make it.
  • Ready in 10 minutes of work: melt, mix, press, chill.
  • Make-ahead friendly: it tastes even better the next day.
  • Perfect for festivals and parties: slice it into small squares and serve on a platter, or pack a few pieces in a box for gifting.
  • Endlessly flexible: change the nuts, biscuits or dried fruit to whatever you have.

The Ingredients, and Why Each One Matters

  • Chocolate (300 g): use semisweet or bittersweet chocolate, around 50–60% cocoa. It is the main flavour, so use one you enjoy eating. Very sweet compound chocolate will set, but the taste will be flatter.
  • Butter (170 g): it makes the chocolate soft enough to slice cleanly once chilled. Without it, the cake sets too hard and cracks.
  • Honey (60 g): it adds sweetness, a glossy finish and a slightly chewy, fudgy bite. Golden syrup or maple syrup work the same way.
  • Walnuts and almonds (75 g and 70 g): toast them first. Toasting brings out the flavour and keeps them crunchy inside the chocolate.
  • Biscuits (180 g): digestives are classic, but any eggless cookie works: Marie, butter biscuits, chocolate chip cookies or a mix. Break them by hand into chunky pieces, not crumbs, so every slice has texture.
  • Dried fruit (¼ cup): raisins, cranberries, chopped apricots or chocolate-covered raisins add little bursts of sweetness and colour.
  • Cocoa powder: just for dusting the top before slicing.

  1. Melt gently. Put the chocolate, butter and honey in a heatproof bowl over a pan of barely simmering water. Stir until smooth and glossy. Keep the heat low; chocolate burns easily.
  2. Prepare the mix-ins. In a large bowl, combine the toasted walnuts, almonds, broken biscuits and dried fruit.
  3. Combine. Pour the melted chocolate over the dry mix and fold until every piece is coated.
  4. Press it in. Spoon the mixture into a loaf tin lined with parchment paper. Press it down firmly with a spatula, especially into the corners, so there are no air gaps and it slices cleanly.
  5. Chill. Cover and refrigerate until completely firm.
  6. Slice and serve. Lift the cake out using the parchment, dust with cocoa, and cut with a sharp knife.

My Tips for the Best Biscuit Cake

  • Press, press, press. A firmly packed chocolate biscuit cake slices clean; a loosely packed one crumbles.
  • Warm knife, clean cuts. Dip the knife in hot water, wipe it dry, and slice. Wipe between cuts.
  • Do not over-crush the biscuits. Chunks give the beautiful mosaic look when you cut it.
  • Let it sit for 5 minutes out of the fridge before slicing if it feels too hard.
  • Line the tin with overhanging parchment so you can lift the cake out in one piece.

Substitutions and Variations

  • Honey: golden syrup, maple syrup or liquid glucose.
  • Nuts: pistachios, cashews or hazelnuts. For a nut-free version, use extra biscuits and dried fruit.
  • Biscuits: any eggless biscuit or cookie. Check the packet if you need it fully eggless.
  • Festive twist: add a pinch of cardamom to the melted chocolate and top with chopped pistachios and dried rose petals.
  • Kids’ version: use milk chocolate and add some colourful sprinkles on top.

Storage

  • Fridge: keep it covered in the fridge for up to a week. Serve chilled or after 5 minutes at room temperature.
  • Freezer: wrap slices well and freeze for up to a month. Thaw in the fridge.
  • For gifting: pack the slices in a box lined with butter paper and keep it cool until you hand it over.
