Ingredients

  • 300 g semisweet or bittersweet chocolate chopped
  • 3/4 cup butter (170 g)
  • 1/4 cup honey (60 g)
  • 3/4 cup walnuts (75 g), toasted and roughly chopped
  • 3/4 cup almonds (70 g), chopped or slivered, toasted
  • 180 g digestive biscuits or any eggless biscuits, broken into pieces
  • 1/4 cup chocolate-covered raisins or mixed dried fruit (about 40 g)
  • cocoa powder for dusting

Equipment

  • Loaf tin (about 9 x 5 inch)
  • parchment paper
  • Heatproof bowl
  • Saucepan
  • Spatula

Method

  1. Line a loaf tin with parchment paper, leaving some overhang on the sides.
  2. Put the chocolate, butter and honey in a heatproof bowl over a pan of barely simmering water. Stir until melted, smooth and glossy.
  3. In a large bowl, mix the walnuts, almonds, broken biscuits and dried fruit.
  4. Pour the melted chocolate over the dry mix and fold until everything is evenly coated.
  5. Spoon the mixture into the tin and press it down firmly, especially into the corners.
  6. Cover and refrigerate for at least 4 hours, or overnight, until completely firm.
  7. Lift the cake out using the parchment, dust with cocoa powder, and slice with a warm, dry knife.

Notes

  • Use any eggless biscuits: digestives, Marie, butter biscuits or chocolate chip cookies.
  • Swap the honey for golden syrup or maple syrup.
  • Change the nuts and dried fruit to whatever you have.
  • Store covered in the fridge for up to a week, or freeze slices for up to a month.
  • For a festive twist, add a pinch of cardamom to the melted chocolate and top with pistachios and rose petals.
