Rose Pistachio White Chocolate Fudge (No-Bake Diwali Sweet)

This rose pistachio white chocolate fudge is my favourite no-bake Diwali sweet. It needs just white chocolate and condensed milk, a little rose water and pistachios, no oven, and it makes the prettiest homemade Diwali gift.

It is a fusion of a classic fudge and our Indian barfi: creamy and melt-in-the-mouth, with the fragrance of rose and the crunch of toasted pistachios. You can make a whole batch in 15 minutes and let the fridge do the rest.

My tips

  • Melt in short bursts. Heat in 30-second intervals and stir each time, so the white chocolate doesn’t burn.
  • Toast the pistachios. Toasting brings out their flavour and keeps them crunchy.
  • Press the toppings in. After spreading, press the pistachios and rose petals in lightly with a spatula so they stay put.
  • Be patient. Give it 3–4 hours in the fridge to set fully before cutting.
  • Play with flavours. Try vanilla, lemon or almond instead of rose.

How to pack it for Diwali gifting

  • Place each square in a paper muffin liner and stack them in a pretty gift box.
  • Or wrap each piece in brown or white butter paper, seal with colourful tape or ribbon, and pack them in a box.
  • Use cookie cutters for diyas, stars or hearts to make the box extra festive.

Rose Pistachio White Chocolate Fudge

An easy no-bake Indian fusion fudge made with white chocolate and condensed milk, flavoured with rose and studded with pistachios. Perfect for Diwali gifting.

Ingredients
  

  • 250 grams white chocolate chopped
  • 200 grams sweetened condensed milk
  • 1/2 teaspoon edible rose water
  • saffron rose flavour a few drops, optional
  • 2-3 tablespoon pistachios toasted and chopped, plus extra for the top
  • edible dried rose petals plus extra for the top

Method
 

  1. Line a 7-inch square tin with butter paper.
  2. Put the chopped white chocolate and condensed milk in a heatproof bowl. Microwave in 30-second bursts, stirring each time, until the chocolate melts and combines smoothly with the condensed milk.
  3. Stir in the rose water, saffron rose flavour (if using), chopped pistachios and dried rose petals.
  4. Pour into the lined tin and spread evenly with a spatula. Sprinkle more pistachios and rose petals on top and press them in lightly so they stick.
  5. Refrigerate for 3–4 hours, until fully set.
  6. Lift the fudge out using the butter paper and cut into 9 big squares. Cut each big square into 4 bite-size squares or 2 small bars, or use cookie cutters for fun shapes.

Makes 9 big squares. Each big square can be cut into 4 bite-size squares or 2 small rectangular bars, which is perfect for filling gift boxes.
Change the flavour easily: swap the rose for vanilla, lemon or almond.
For gifting, place each square in a paper muffin liner and stack them in a gift box, or wrap each piece in butter paper and tie with a ribbon.
