Ingredients

  • 1 1/2 cups all-purpose flour (195 grams)
  • 1/2 cup whole wheat flour (65 grams)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup raisins
  • 1/4 cup walnuts-toasted
  • 1 egg (lightly beaten)
  • 1&1/4 cup applesauce (295 grams)
  • 1/4 cup any flavourless oil (55 grams)
  • 1/2 cup plain yoghurt (120 grams)
  • 1/2 cup light brown sugar (100 gram)
  • 1/2 teaspoon vanilla ectract

Instructions 

  • Preheat oven to 350°F (180°C) and grease a loaf pan.
  • In a bowl, whisk together dry ingredients.
  • In another bowl, whisk wet ingredients until smooth.
  • Gently fold wet ingredients into dry, avoiding overmixing.
  • Pour batter into prepared pan, sprinkle toppings if desired.
  • Bake for 45-55 minutes, or until a toothpick inserted comes out clean.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack.
  • Slice and enjoy!
