Temperature is falling day by day and all I want is sitting with my cup of coffee and some tea cake. And what’s better than a classic Cardamom Cake. So here I am with my favorite recipe of Cardamom Cake. Let’s get started.
Ingredients
1 Cup All purpose flour (200g)
4 Egg Whites
4 Egg Yolks
1 Cup Powdered Sugar (200g)
100g Melted Butter
100ml Oil
3/4 teaspoon Baking Powder
1/4 teaspoon baking soda
1 teaspoon Cardamom Powder
Method
- Preheat the oven to 180°C and grease an 8″ cake tin.
- In a bowl, beat egg whites until soft peaks are formed.
- In an another bowl, mix sugar, butter and oil with an electric mixer or a hand whisk.
- Once everything is incorporated add egg yolks, one at a time. And mix well again.
- Add Cardamom powder and keep on mixing.
- Now add baking powder and baking soda and continue with the mixing.
- When all is mixed properly, add half of the egg whites mixture and fold gently with a spatula.
- Use Cut & fold method through this mixing.
- Now is the time to add half of the flour and keep on mixing gently.
- Add remaining egg whites and again keep on mixing gently.
- Lastly add the remaining flour and mix.
- When the mixture is smooth enough and everything has been incorporated, shift the batter to the baking pan.
- Run a knife or spatula inside the batter to remove the bubbles, pat the tin 2-3 times and bake in a preheated over at 180°C for about 30-35 minutes or until a toothpick inserted in it comes out clean.
- Once done, take it out and keep it on the wire rack for 5-10 minutes and then remove from the tin.
- Serve as it is or pour some sugar glaze over it before serving. Enjoy!
