Temperature is falling day by day and all I want is sitting with my cup of coffee and some tea cake. And what’s better than a classic Cardamom Cake. So here I am with my favorite recipe of Cardamom Cake. Let’s get started.

 

Ingredients

1 Cup All purpose flour (200g)
4 Egg Whites
4 Egg Yolks
1 Cup Powdered Sugar (200g)
100g Melted Butter
100ml Oil
3/4 teaspoon Baking Powder
1/4 teaspoon baking soda
1 teaspoon Cardamom Powder

 

Method

  1. Preheat the oven to 180°C and grease an 8″ cake tin.
  2. In a bowl, beat egg whites until soft peaks are formed.
  3. In an another bowl, mix  sugar, butter and oil with an electric mixer or a hand whisk.
  4. Once everything is incorporated add egg yolks, one at a time. And mix well again.
  5. Add Cardamom powder and keep on mixing.
  6. Now add baking powder and baking soda and continue with the mixing.
  7. When all is mixed properly, add half of the egg whites mixture and fold gently with a spatula.
  8. Use Cut & fold method through this mixing.
  9. Now is the time to add half of the flour and keep on mixing gently.
  10. Add remaining egg whites and again keep on mixing gently.
  11. Lastly add the remaining flour and mix.
  12. When the mixture is smooth enough and everything has been incorporated, shift the batter to the baking pan.
  13. Run a knife or spatula inside the batter to remove the bubbles, pat the tin 2-3 times and bake in a preheated over at 180°C for about 30-35 minutes or until a toothpick inserted in it comes out clean.
  14. Once done, take it out and keep it on the wire rack for 5-10 minutes and then remove from the tin.
  15. Serve as it is or pour some sugar glaze over it before serving. Enjoy!
