Dark Chocolate Rocky Road Fudge (No-Bake, Eggless)

Hello lovelies,

Some desserts are pure fun, and rocky road is one of them. Melted dark chocolate, crunchy biscuits, chunks of your favourite chocolate bars and soft mini marshmallows, all set into one rich, chewy slab. It’s no-bake, eggless, and a hit with kids and grown-ups alike.

It’s also wonderfully forgiving. Use whatever chocolate bars, biscuits or nuts you have at home, and it still turns out delicious.

Why you’ll love this rocky road

  • No oven, no eggs, and just one bowl
  • Every bite is different: chewy, crunchy and chocolatey
  • Easy enough for kids to help make
  • Perfect for Diwali, parties and gifting

Ingredients and why they matter

  • Dark chocolate, butter and honey: melt together into a glossy base that sets firm but stays fudgy.
  • Digestive biscuits: add crunch. Any plain biscuit works.
  • Chocolate bars: I used bars like Fuse, Crispello and Bar One. Use your favourites.
  • Mini marshmallows: the soft, chewy “rocky road” part.
  • Nuts (optional): pecans, walnuts, almonds or pistachios.

My tips

  • Let the chocolate cool to room temperature before adding the marshmallows, or they’ll melt.
  • Press the mixture well into the corners of the tin for neat squares.
  • Use a hot, dry knife for clean cuts.
  • Prefer it sweeter? Use milk chocolate instead of dark.

Storage

Keep it in an airtight box in the fridge for up to a week.

FAQ

Is this rocky road eggless? Yes, completely.

Can I skip the honey? Yes. Use golden syrup, or leave it out for a slightly firmer fudge.

  6. Pour into a 7-inch square tin lined with butter paper. Spread evenly, pushing into the corners.
  7. Pour the reserved chocolate over the top and spread it.
  8. Refrigerate for 3–4 hours, until set.
  9. Lift it out of the tin. Drizzle with melted white chocolate and sprinkle with M&Ms or sprinkles.
  10. Chill for 30 more minutes, then slice into squares.
