Ingredients

Fudge
  • 250 g dark chocolate chopped
  • 100 g butter
  • 30 g honey
  • 2-3 chocolate bars such as Fuse, Crispello or Bar One, chopped into small chunks
  • 50-60 g mini marshmallows halved if large
  • 70 g digestive biscuits or any biscuits, crushed
  • nuts (optional) pecans, walnuts, almonds or pistachios
Topping
  • white chocolate melted, for drizzling
  • M&Ms, Gems or sprinkles

Equipment

  • 7-inch square tin
  • Butter paper (parchment)
  • Microwave-safe bowl
  • Spatula

Method

  1. Put the dark chocolate, butter and honey in a microwave-safe bowl. Heat in 15-second bursts, stirring each time, until the chocolate melts.
  2. Mix well and let it cool to room temperature.
  3. Chop the chocolate bars into small chunks. Halve the marshmallows if they are big.
  4. Keep a little of the melted chocolate aside for the top.
  5. Crush the biscuits into the melted chocolate. Add the chocolate bar chunks, marshmallows and nuts (if using), and mix well.
  6. Pour into a 7-inch square tin lined with butter paper. Spread evenly, pushing into the corners.
  7. Pour the reserved chocolate over the top and spread it.
  8. Refrigerate for 3–4 hours, until set.
  9. Lift it out of the tin. Drizzle with melted white chocolate and sprinkle with M&Ms or sprinkles.
  10. Chill for 30 more minutes, then slice into squares.
