Pomegranate Pistachio Chocolate Bark (No-Bake, Eggless)
Hello lovelies,
If you want a Diwali gift that looks like it came from a fancy chocolate shop but takes you 15 minutes of actual work, this is it. Dark chocolate, ruby-red pomegranate, green pistachios and a little coconut. It looks like a celebration on a tray.
No oven, no eggs, and just 4 ingredients. Break it into rough pieces, pop them into a box with a ribbon, and you have a homemade gift everyone will remember.
Why you’ll love this bark
- Only 4 ingredients, and no baking at all
- 100% eggless, so it works for every guest and every festival day
- Sweet, tart and crunchy in one bite
- Kids can sprinkle the toppings, so it’s a fun one to make together
Ingredients
- 200 g dark chocolate, chopped
- ½ cup pomegranate seeds (arils)
- ¼ cup pistachios, toasted and roughly chopped
- 1 tablespoon desiccated (dried) coconut
How to make it
- Prepare the tray. Line a baking tray or plate with parchment paper.
- Dry the pomegranate. Spread the seeds on a kitchen towel and pat them completely dry. Water stops chocolate from setting properly.
- Toast the pistachios. Dry-roast them in a pan on low heat for 3–4 minutes, cool, then chop roughly.
- Melt the chocolate. Use a double boiler, or microwave in 30-second bursts, stirring each time, until smooth. Don’t overheat it.
- Spread. Pour the chocolate onto the parchment and spread it into a rectangle about ½ cm thick.
- Top it. While the chocolate is still wet, scatter the pomegranate, pistachios and coconut evenly. Press them in lightly so they stick.
- Set. Refrigerate for 20–30 minutes, until firm.
- Break. Lift it off the paper and break it into rough, rustic pieces.
My tips
- Use a good dark chocolate you enjoy eating on its own. The bark tastes only as good as the chocolate.
- Compound (cooking) chocolate works too and sets faster, but couverture tastes richer.
- Keep the pomegranate seeds bone dry, and add them last.
- Want it sweeter? Use half milk chocolate and half dark.
Storage and gifting
Because it has fresh pomegranate, keep the bark in an airtight box in the fridge and eat it within 3 days. For gift boxes, make it the day before and add a small butter-paper sheet between layers. Read my guide on packing homemade sweets for gifting for more ideas.
