If you have ever stood in your kitchen craving something sweet but felt too tired to bake, this recipe was made for you. This condensed milk cake is the kind of recipe that makes you feel like a genius in the kitchen — because it is impossibly simple and impossibly delicious at the same time.
Some recipes feel like they belong to everyone. Mary Berry’s lemon drizzle cake is one of them. You have probably seen it on The Great British Bake Off, in her books, or on the internet countless times. And there is a very good reason for that — it is ridiculously good.
When I decided to try her recipe, I was curious. Would it be as simple as she makes it look? Would the flavour live up to the reputation? And most importantly, could I make it work in my Indian kitchen with a few tweaks?
The answer to all three is yes. And then some.
There are cakes you make for occasions. And then there are cakes you make just because it is three in the afternoon, the kettle is on, and something warm and fragrant from the oven sounds like exactly the right idea. This coconut butter cake is firmly in that second category.
