This Dark Chocolate Cherry Cake holds a special place in my heart. I first made it for my son’s birthday, and it was an instant hit. The combination of dark chocolate and cherries reminded us of the traditional Black Forest cake, but with a modern twist. Every time I bake this cake, it brings back memories of that joyous celebration, filled with laughter and delicious food.

Chocolate Cherry Cake

Ingredients

For Cherry Sauce

  • 650-700 grams of Fresh Cherries
  • 1/3 cup sugar ((65 grams))
  • 1 tablespoon cornstarch/cornflour
  • 2 tablespoons of any liquor (vodka/gin/rum)

For Cake:

  • 1 & 1/2 cup butter ((340 grams))
  • 1 & 2/3 cups Caster sugar ( (350 grams))
  • 1 & 1/2 cup cake flour ((180 grams))
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cocoa powder ((50 grams))
  • 1/2 cup hot water
  • 1/2 cup yoghurt/ sour cream/curd/buttermilk
  • 85 grams of semi-sweet or bitter-sweet chocolate
  • 4 eggs
  • 2 teaspoons vanilla extract

Instructions 

Step 1: Make the Cherry Mixture

  • Combine Ingredients: In a medium saucepan, combine 1.5 pounds of cherries, 1/3 cup of sugar, 1 tablespoon of cornstarch, and 2 tablespoons of any liquor (if using).
  • Cook: Cook over medium-high heat, stirring occasionally. Bring the mixture to a boil to activate the cornstarch and thicken the sauce. This should take about 4 minutes.
  • Cool: Once thickened, remove from heat and let it cool. This mixture will be used both in the cake batter and as a topping.

Step 2: Prepare the Cake Batter

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, butter it, and dust with cocoa powder
  • Mix Dry Ingredients: In a bowl, whisk together 1.5 cups of cake flour, 3/4 teaspoon of baking soda, and 1/2 teaspoon of kosher salt.

  • Cream Butter and Sugar: In a large mixing bowl, beat 3 sticks of unsalted butter with 1 2/3 cups of sugar until light and fluffy. This should take about 3-5 minutes.
  • Add Eggs: Add 4 eggs one at a time, beating well after each addition. Then, add 2 teaspoons of pure vanilla extract.
  • Combine Mixtures: Gradually add the dry ingredients to the butter mixture in three parts, alternating with the chocolate mixture in two parts, beginning and ending with the dry ingredients. Mix until just combined.
  • Fold in Cherry Mixture: Fold in 1.25 cups of the cooled cherry mixture into the batter until evenly distributed.

Step 3: Bake the Cake

  • Transfer to Pan: Pour the batter into the prepared pan, smoothing the top with a spatula.
  • Bake: Bake for about 45-50 minutes, or until a cake tester inserted into the center comes out clean or with a few moist crumbs.
  • Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 4: Add the Toppings

  • Whipped Cream or any other frosting of your choice: Once the cake is cool, spread a generous layer of whipped cream over the top. I used whipped white chocolate ganache.
  • Cherry Topping: Spoon the remaining cherry mixture over the whipped cream, spreading it evenly.

Then there’s the **buttery crumb** of digestive cookies, a close cousin to the classic graham cracker. For a pop of sweetness, we add in some **chocolate-covered raisins** (or any dried fruit you fancy). The star of the show, of course, is the rich **dark chocolate**, melted together with butter and a touch of **syrup** for that perfect gooeyness.

Ingredients

  • 100 grams Butter
  • 200 grams sweetened condensed milk
  • 400 grams white chocolate
  • 10-15 Oreos

 

 

Instructions

    1. Line a square baking tin with baking paper.
    2. Place a heat proof bowl over a saucepan of simmering water.
    3. Combine butter, white chocolate and sweetened condensed milk.
    4. Heat on medium to melt everything. Stir constantly.
    5. Once everything is melted and mixed, and everything is fudgy , add roughly broken Oreos
    6. Remove from heat pour the fudge in the cake tin.
    7. Press and smooth it up in the pan.
    8. Chill in the fridge for four hours.
    9. Then carefully remove and slice it up.
    10. You can store it in the fridge or the freezer for several days and even months.

I love baking muffins, not only they are delicious. But they are a easy to make. You just measure few ingredients and dump them into a bowl, mix it and bake it. INGREDIENTS

1 ½ cup Refined Flour
1 cup fresh curd
½ cup oil
¾ cup sugar
1 ¼ tsp baking powder
½ tsp baking soda
1 1/2 tsp Vanilla essence or extract
1/4 cup Cocoa Powder
1-2 tbsp Milk

METHOD

  1. Preheat oven to 180°C for ten minutes.
  2. Take you muffin tray and line it with liners or grease it with butter or oil, if you do not have liners.
  3. In a bowl mi curd and sugar well until sugar completely dissolves.
  4. Then add baking powder and baking soda and mix well. Now wait till 5 minutes.
  5. After 5 minutes you will see bubbles appearing over this mixture.
  6.  Now add oil and vanilla essence and beat well.
  7. In the end, add refined flour in segments and mix well. But do not over mix. Just fold the flour in the wet mixture properly.
  8. Now add cocoa powder in this batter and again mix well.
  9.  Now is the time to shift the prepared batter into the muffin liners. Once it’s all shifted, tap the tin on the kitchen slab twice to remove the bubbles if any.
  10.  Bake in preheated oven at  180 deg C  for 20-25 mins or till a toothpick inserted into the center of a muffin comes out clean.
  11. Transfer to racks and let cool 10 minutes, then serve warm as it is or with some vanilla ice cream.
  12. You can serve just like this at tea time or you can decorate it for some special occasion.
  13. You can keep these muffins for a week in an airtight container and you can also freeze them in an individual packed in a cling film.
