Sprinkle Cake Recipe

 

Candy sprinkles are mainly used for decorating the tops of cakes and cookies. But I am going to add these in the cake batter today. I really liked how the cake turned up with its colorful dots of bright sprinkles. I baked this cake on my nephews birthday, at the last moment, to give him a surprise. His happy face after eating the cake was my reward. Hope you will like the recipe too. So let’s get started.

Ingredients

3/4 cup All Purpose Flour
1 cup Sugar (3/4 cup for batter and 1/4 cup to be added in the egg whites)
2 Eggs (separated)
1 tsp Vanilla essence or Vanilla Extract (or any other essence of your choice)
1 /2 cup of Oil
1 tsp of baking powder
1/4 cup of milk

1/2 tsp lemon juice
3/4 cup of rainbow sprinkles

Method

 

  1. Preheat your oven to 180°C (350° F). Grease and flour an 8″ (20 cm) round or any other shaped cake pan. I am using here a bundt pan.
  2. Separate the eggs, keeping the egg yolk in one bowl and whites in another bowl. 
  3. In a bowl mix flour and the baking powder.
  4. In another big bowl, add the oil and 3/4 cup sugar and beat with a mixer. you can either use a hand mixer or a stand mixer. Beat these until light and fluffy.
  5. Add the egg yolks and vanilla essence. Beat until well combined.
  6. Scrape the bottom and sides of the bowl as required.
  7. now alternatively add flour mixture and the milk, beginning and ending with the flour.
  8. In another big bowl, beat the egg whites with the remaining sugar and lemon juice.
  9. Continue beating it at high speed until shiny medium firm peaks form.
  10. With a rubber spatula gently fold in the egg whites in the batter in 2-3 additions.
  11. Also add rainbow sprinkles and fold gently. Do not mix harshly and do not over mix.
  12. Pour the batter in the pan and bake it in the preheated oven at 180° C for 30-35 minutes or until the toothpick inserted in the center comes out clean.
  13. Once baked, take out the cake and let it cool for sometime. Once cool, take it out from the pan and decorate it with your own choice or whatever is available with you at home.
  14. I decorated with chocolate ganache and garnished it with some rainbow sprinkles.
