Eggless Mango Cake

 

I’ve been getting a few requests to post an egg-less mango cake since mangoes are in season. I’m now going to try various mango cake recipes this summer so that we can find out the perfect one to stay with us always. So starting from today I’ll be making different mango cake recipes and today is the day for egg-less mango cake with condensed milk. I baked this cake on the occasion of  my Mom and Dad in law’s anniversary. 
So let’s get started.

Ingredients:

1 cup all-purpose flour
1 cup mango pulp
Half cup condensed milk
Half cup powdered sugar
Half cup milk
One over 3 cup oil
1 teaspoon baking powder
1 x 4 teaspoon baking soda
 

METHOD

  1. Firstly we will mix baking powder, Baking soda and all-purpose flour.Mix the ingredients till the alarms gets dissolved.
  2. Now add butter, mango pulp, condensed milk and powdered sugar in a bowl. Whisk the ingredients properly and mix them well.
  3. Pre-heat your oven to at 180° C or 350° F. Grease the container with butter or Oil now take a butter paper according to the base of the container and place it at the bottom of the container. Now put oil or butter on the paper also so that it gets soft.
  4. Now add The dry ingredients to the wet ingredients and mix them well. If you find your batter to be bit thick add some milk to thin its consistency.
  5. Now put the batter in the container and tap it twice on your kitchen counter.
  6. We will now bake the cake at 180° C or 350° F for 35 to 40 minutes.
  7. Once the cake is baked completely, take it out of the oven and give it a toothpick test. If the toothpick inserted in the cake,  comes out clean it means our cake is ready. Let it cool down for sometime and take it out from the container once it’s cool. Remove the butter paper from the bottom of the cake and cake is ready
  8. Now if you want to decorate the cake in a simple way without any kind of frosting just decorate it with the fresh mango.
  9. Cut mango slices half in horizontal way and half in vertical way as shown in the video. Now starting from the outer side of the cake towards the inner side place the mango slices from big one to small ones, arranging them like a rose flower pattern.  Once you have covered the whole cake you will see that it seems like a big yellow rose made of mangoes this will beautify the cake and without any kind of heavy icing, your cake will look as beautiful. You can now have the cake or keep it in the fridge for a day or two.

Note: If you are keeping this cake for evening celebration or to use after few hours, then don’t forget to cover the Mango with some kind of plate so that the Mango doesn’t turn brown.
