These Banana Muffins are a snap to make. Just mix the dry ingredients together in one bowl, the wet ingredients in another bowl. Combine the two and you are done.These banana muffins are not only moist and delicious and bursting with flavor but they are also so easy to make. AND they make the house smell amazing!
So Let’s get started!
Ingredients:
1 3/4 Cups All purpose flour
1 Cup Walnuts – 115 grams (or any other nuts of your choice)
3/4 cup (150 grams) sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
3 eggs
1/2 cup (113 grams) unsalted butter
3 ripe bananas
1 teaspoon Vanilla essence or Vanilla extract
Method
- Preheat oven to 180 degrees C.
- Line your muffin pan with paper liners.
- Roast the nuts, cool and then chop coarsely.
- In a bowl mix the flour, sugar, baking powder, baking soda, salt, cinnamon, and nuts.
- In another bowl mix together, the mashed bananas, eggs, melted butter, and vanilla.
- Now lightly fold the wet ingredients into the dry ingredients just until well combined and the batter is thick and coarse. Do not over mix the batter. Over mixing the batter will make the muffins tough.
- Spoon the batter into the ready muffin tins.
- Bake about 20 – 25 minutes or until a toothpick inserted in the centre comes out clean.
- Place on a wire rack to cool for five minutes and then remove muffins from pan.
- Serve warm or at room temperature.
Makes 12 regular sized muffins.
