Celebrate with these gorgeous Berry Parfaits—a delightful mix of juicy berries and creamy mascarpone goodness! Perfectly light, refreshing, and ready in minutes, they’re a treat for your taste buds and eyes. 🌿💖
Ingredients:

Berries: 3–4 cups (blackberries, blueberries, raspberries, strawberries, or other fresh fruits)
Sugar: 1–2 tbsp granulated sugar (adjust to taste)
For the Cream:

Mascarpone cheese: ½ cup (115g) (or cream cheese)
Whipping cream: ½ cup (120ml) cold
Confectioners' sugar: 3 tbsp (25g)
Vanilla extract: ½ tsp

Instructions:
🫐Toss the berries with sugar and let them sit for 15–30 minutes to macerate.
🫐Whip mascarpone, whipping cream, sugar, and vanilla until soft peaks form.
🫐Layer berries and cream in parfait glasses. Garnish with mint if desired.
🫐Serve immediately or refrigerate for a few hours.
🫐Makes 4 servings. Enjoy!

Today, 24th November, we celebrate Australia’s favourite kids’ party food—Fairy Bread! This iconic treat has been bringing joy to Aussie celebrations for decades. Loved for its simplicity and nostalgia, Fairy Bread is all about bright sprinkles and buttery goodness on soft white bread. It’s the ultimate party classic that instantly lights up any table! 🌈💖

Here’s how to make it:
✔️ Ingredients

4 slices fresh white bread (regular, no-fuss loaf)
2 tbsp spreadable butter (softened)
¼ cup sprinkles (100s & 1000s)

✔️ Instructions
🍞Let the butter soften for 15 minutes, making it easy to spread.
🍞Spread the butter evenly over the bread, leaving a small gap at the edges.
🍞Generously sprinkle 100s & 1000s on top and tip the bread gently to let any excess fall off.
🍞Cut each slice diagonally into 4 triangles.
🍞Serve piled up or neatly lined on a platter—and enjoy the magic!

“Celebrate National Espresso Day with the ultimate treat for coffee and chocolate lovers – Espresso Brownies! ☕🍫 These rich, gooey delights are infused with bold espresso flavor, topped with a shiny crinkly crust, and sprinkled with a touch of sea salt for the perfect finish. Whether you’re a coffee aficionado or just love a decadent dessert, these brownies are a must-try. Pair them with your favorite brew and indulge in the magic of espresso today! 🌟

While this picture is for reference only, the recipe is 100% accurate and tested to perfection. Trust me, the brownies you bake will look and taste just as amazing—gooey, fudgy, and full of espresso flavor. Try it out and let me know how they turn out for you! ☕

Ingredients

• 130 g granulated sugar
• 130 g brown sugar
• 3 large eggs (room temperature)
• 120 g butter
• 75 g dark chocolate chips (melted)
• 70 g vegetable oil (e.g., canola)
• 1 ½ tsp vanilla extract
• 75 g all-purpose flour
• 35 g cocoa powder
• 1 tbsp cornstarch
• 2 tbsp instant espresso powder
• ½ tsp salt
• 75 g dark chocolate chips (to fold in)
• Sea salt (for garnish)

Instructions

1. Preheat oven to 160ºC/325ºF. Line a 20x20 cm square pan with parchment paper.
2. Brown the butter in a saucepan over medium-high heat (8–10 minutes). Pour into a bowl, scraping the browned bits for flavor. Stir in cocoa powder, then mix in 75 g melted chocolate chips.
3. Sift flour, cornstarch, espresso powder, and salt together.
4. In a separate bowl, beat eggs, granulated sugar, and brown sugar with an electric mixer until light and fluffy (4 minutes). Add the butter mixture, oil, and vanilla; mix well.
5. Gently fold the dry ingredients into the batter until just combined. Add the remaining chocolate chips and fold in.
6. Pour the batter into the prepared pan, smooth the top, and bake for 45–50 minutes.
7. Cool completely, then sprinkle with sea salt before serving.

I don’t know about you, but the weather ☁️ here is pretty great for muffins and a cup of tea. ☕️
In frame my Triple chocolate Eggless muffins.

🍫 Triple Chocolate Eggless Muffins🍫
Ingredients:
🍫1 cup milk (240 ml)
🍫¾ cup cocoa powder (75 g)
🍫1 teaspoon espresso powder
🍫1 ½ cup all-purpose flour (210 g)
🍫2 teaspoons baking powder
🍫½ teaspoon baking soda
🍫½ teaspoon salt
🍫1 tablespoon vinegar
🍫1 teaspoon vanilla extract
🍫1/3 cup + 1 tablespoon of any flavourless oil (95 ml)
🍫¾ cup sugar (150 g)
🍫3 tablespoons yoghurt/curd (45 g)
🍫¾ cup dark chocolate or chocolate chips (can take semi-sweet also)

Instructions:
🍫In a mixing bowl, combine the milk, espresso powder and cocoa powder. Keep aside.
🍫In a separate mixing bowl, whisk together the flour, baking powder, baking soda & salt until well combined.
🍫Combine vinegar, vanilla, oil, sugar, and yoghurt with the cocoa powder & milk mixture.
🍫Gently fold the wet mixture into the dry ingredients, mixing by hand until just combined.
🍫Stir in the chocolate until evenly distributed.
🍫Cover the bowl with a towel and let the batter rest for 15 minutes.
🍫Meanwhile, preheat your oven to 220º C.
🍫Line every other well of a 12-count muffin pan with muffin liners, so you’ll only fill six or seven muffin wells with batter.
🍫Fill the liners to the top with batter and sprinkle additional chocolate chips on top.
🍫Place the pan in the centre of the oven and bake for 5 minutes at 220º C.
🍫Then, without removing the muffins, lower the oven temperature to 180º C and continue baking for 20 to 23 minutes, or until a toothpick inserted in the centre comes out clean.
🍫Let the muffins cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
